Celebrating Sally Cox: A Lifetime of Strength and Giving Back

At New Mercer Commons Assisted Living Community, part of Columbine Health Systems, we believe in the power of community support, and this philosophy extends deeply to our residents. We celebrate individuals who not only embrace their own journeys but also inspire others through acts of kindness and generosity. One such remarkable resident is Sally Cox, whose lifetime of strength and dedication to giving back exemplifies the values we hold dear.

Sally Cox has always embodied resilience and independence. Born on July 30, 1925, Sally’s early years were marked by her battle with asthma. The need for specialized care brought her to the Mayo Clinic, where doctors advised her parents to seek a drier climate for her well-being. At the age of 19, Sally courageously boarded a train bound for Denver, Colorado, setting the stage for a remarkable journey.

In Colorado, Sally pursued higher education at Colorado University, where she earned her Bachelor of Science in Home Economics. Her professional journey began with an internship at the Colorado State Hospital. After completing her internship, she became a member of the American Dietetics Association and obtained full-time employment at the Colorado State Hospital, where she dedicated 31 years of service, rising to the position of assistant director. Her career was a testament to her unwavering dedication and passion for helping others.

Sally’s spirit of giving extends beyond her professional life. Each year, she celebrates her birthday in a unique and meaningful way. This year, for her 99th birthday, Sally chose to revive the tradition of a "pounding." Originating from the Quakers, a pounding involves gifting a pound of pantry staples to those in need, a practice rooted in community support during difficult times or significant life events.

Sally, working with her caregiver, Starr Parkes, invited her family, friends, fellow residents, and staff members at New Mercer Commons, as well as the greater Columbine Health community, to join her in collecting food items for the Larimer County Food Bank throughout the month of July. Her goal is to help restock the shelves for those facing challenging times. Non-perishable food items can be placed in the marked barrel just inside the Human Resources entrance of the Columbine Health Management Office at 802 West Drake Road, Suite 101, Fort Collins, Colorado 80526, until July 29th at 10:00 a.m.

Most Needed Food Items:

  • Peanut butter

  • Canned meat/fish

  • Canned fruit

  • Whole grain, low sugar cereal

  • Whole grain pasta

  • Brown rice

  • Macaroni and cheese

Despite being legally blind and having difficulty hearing, Sally's determination to give back to her community remains unwavering. Her life is a shining example of strength, compassion, and an enduring commitment to making the world a better place. Sally Cox continues to inspire us all with her generous heart
